Chickpea Flour
Chickpea flour is a gluten-free flour that is a traditional ingredient in Indian cuisine, but one that is gaining popularity in the West as an alternative to wheat flour. Chickpea flour can be used as a binding ingredient in fritters and veggie burgers, as a thickener for sauces, soups and stews, for making flatbreads and batter-based foods like pancakes and waffles, and to make batters for deep-frying other foods. It's also a great ingredient to combine with other gluten-free flours for making quickbreads, cookies and muffins.
